4 egg yolks 2 tablespoons of lemon juice 1/4 teaspoon of salt A dash of pepper 1/2 cup of butter, melted
Combine egg yolks, lemon juice, salt, and pepper in container of an electric blender; process at high speed until thick and lemon colored.
Turn blender to low speed; add butter to yolk mixture in a slow, steady stream. Turn blender to high speed; process until thickened, about 30 seconds. Yield: 2/3 cup |
