Blender Hollandaise Sauce

1/2 cup of butter or margarine
3 egg yolks
2 tablespoons of lemon juice
1 teaspoon of fresh or frozen snipped chives, optional
1/8 teaspoon of salt
a few grains of cayenne pepper

Place butter in a small sauce pan over moderately low heat until bubbling hot. Put egg yolk, lemon juice, salt and cayenne pepper in blender, cover and switch motor on and off to blend. With motor at high speed, gradually add hot butter in a steady stream until all butter is used. Turn motor off at once.
Serve immediately or place Hollandaise in sauce pan over hot water to keep warm. Add chives just before serving
