| Cucumber Sauce for Chicken
1 teaspoon of prepared mustard 1 teaspoon of tarragon vinegar 1/4 cup of drained prepared horseradish 1 teaspoon of confectioners' sugar 1/2 large cucumber, pared and finely diced 1 cup of heavy cream, whipped
Combine seasonings with cucumber. Fold into cold whipped cream. Makes 4 to 6 servings. Serve on hot broiled chicken halves. Equally good on broiled salmon steaks. It is an unforgettable combination with hot baked stuffed oysters.
