3 tablespoons of minced onion 2 tablespoons of butter or margarine, melted 2 tablespoons of all purpose flour 1 cup of milk 1 1/2 teaspoons of curry powder 1/4 teaspoon of salt 1/8 teaspoon of ground ginger 1 teaspoon of lemon juice
Sauté onion in butter in a heavy saucepan over low heat until tender. Add flour, stirring until smooth. Cook for 1 minute; stirring constantly. Gradually add milk, cook over medium heat, stirring constantly, until mixture is thickened and bubbly. Stir in curry powder, salt, ginger and lemon juice. Serve warm over vegetables. Yield: about 1 cup |
