Diabetic Mock Sour Cream
1 cup of low fat cottage cheese 2 tablespoons of skim milk 1 tablespoon of lemon juice
Combine all ingredients in container of an electric blender, cover and process until smooth and creamy. Transfer mixture to a serving container; cover and refrigerate until thoroughly chilled.
Note: Mock Sour cream may be used as a sour cream substitute to top baked potatoes or tostadas. Yield 18 servings
