| Horseradish Sauce
1 cup of whipping cream 2 tablespoons of prepared horseradish 1 tablespoon of tarragon vinegar 1/2 teaspoon of salt 1/4 teaspoon of pepper 1 teaspoon of prepared mustard 1/4 teaspoon of onion juice 1/4 teaspoon of hot sauce |

Beat whipping cream until just thickened. Add remaining ingredients, mixing well. Chill sauce at least 3 hours. Serve sauce cold with roast beef. Yield: about 2 cups
