| | Lemon Butter Sauce
2 tablespoons of butter 2 tablespoons of all purpose flour 2 cups of water 1 tablespoon of chopped fresh parsley 1 1/2 teaspoons of lemon juice 3/4 teaspoon of salt 1/8 teaspoon of pepper
Melt butter in a heavy saucepan over low heat; add flour, stirring until smooth. Cook 1 minute, stirring constantly. Gradually add water; cook over medium heat, stirring frequently, 20 minutes or until thickened and bubbly. Stir in parsley, lemon juice, salt, and pepper. Yield: about 1 1/2 cups.
