Low Cholesterol  Cheese Sauce

1 1/2 tablespoons of soft margarine
2 tablespoons of all purpose flour
1 cup of skim milk
1 cup of shredded low fat mozzarella cheese
cayenne pepper

In a saucepan, melt margarine over medium low heat. Stir in flour and mix well, cook for 1 minute. Stir in milk and cook over medium heat, stirring 3 to 5 minutes, until mixture comes to a boil and has thickened. Add cheese and stir until melted. Season with cayenne to taste
