Low Fat Beet Relish
1 pound of frozen beets 1/4 cup of frozen chopped onions, minced 1/4 cup of raisins 1 tablespoon of cider vinegar 1 tablespoon of olive oil 1 tablespoon of chopped fresh parsley 1/4 teaspoon of ground black pepper
Preheat the oven to 350ºF. wrap the beets in foil. Roast for 1 hour or until very tender. Let cool, then chop finely. Transfer to a medium bowl. Add the onions, raisins, vinegar, oil , parsley and pepper. Mix well. Makes 2 cups
