Low Fat Chicken Gravy
2 teaspoons of olive oil 1/4 cup of frozen chopped onions, minced 2 cloves garlic, minced 2 tablespoons of all purpose flour 2 cups of frozen defatted Chicken Stock, thawed 1/4 teaspoon of dried thyme 1/4 teaspoon of ground black pepper 1/4 teaspoon of salt
Coat a 10" non stick skillet with non stick cooking spray and place over medium high heat until hot. Add the oil, onions, and garlic. Cook, stirring for 3 minutes or until the onions are soft. Add the flour. Cook, stirring, for 2 minutes. Gradually stir in the stock. Bring to a boil. Reduce the heat to medium. Cook, stirring occasionally for 10 minutes or until the gravy thickens. Stir in the thyme, pepper, and salt. Makes 2 cups
