Low Fat Orange Onion Relish
1 cup of frozen chopped onions, minced 1/2 cup of frozen chopped sweet red peppers, minced 1/4 cup of frozen orange juice concentrate 1/4 cup of scallions 2 tablespoons of olive oil 1 tablespoon of honey 1 teaspoon of Dijon mustard 1/2 teaspoon of ground black pepper
In a medium bowl, combine the onions, red peppers, orange juice, scallions, oil, honey, mustard, and black pepper. Mix well. Let stand at room temperature for 30 minutes, stirring occasionally. Makes 1 1/2 cups
