Low Fat Roast Vegetable Relish
2 cups of halved cherry tomatoes 2 cups of chopped onions 2 cups of chopped sweet red peppers 1 cup of sliced carrots 2 tablespoons of olive oil 1 tablespoon of minced garlic 1/2 teaspoon of Italian herb seasoning 1 tablespoon of balsamic vinegar 1/4 teaspoon of salt
Place the oven to 350ºF. Place the tomatoes, onions, peppers, and carrots on a large piece of foil. Sprinkle with the oil, garlic, and Italian herb seasoning. Fold the foil over the vegetables to form a packet. Roast for 1 hour, or until very tender. Let cool, then chop finely. Place in a large bowl. Add the vinegar and salt. Toss to combine.
