Meat Sauce for Spaghetti
one 4 ounce can of sliced mushrooms 3 tablespoons of butter or margarine 1/4 pound of ground beef 1 tablespoon of chopped peeled onion 1 slice of peeled garlic 2 tablespoons of flour 1 cup of milk 1/4 teaspoon of basil 1/8 teaspoon of pepper one 6 ounce can of tomato paste 1/2 teaspoon of salt
Drain and chop mushrooms. Save liquor. Melt 2 tablespoons of butter or margarine in a large heavy saucepan. Add meat, mushrooms, onion and garlic. Cook, stirring constantly, over moderate heat until meat is browned and onion is tender. Add the remaining butter. Stir in flour smoothly. Pour in milk, stirring vigorously. Add basil. Cook and stir until thickened. Add pepper and tomato paste. Cook and stir continually. Add salt if needed. If sauce is too thick, thin with mushroom liquid. Makes about 2 cups of sauce.
Serve over spaghetti, macaroni and other pastas. Sprinkle top with grated Parmesan of finely cut parsley.
