Mediterranean Sauce
1/2 cup of chopped onion 1/2 cup of chopped green pepper 1 clove garlic, minced Vegetable cooking spray 1 large tomato, chopped 1/2 cup of Chablis or other dry white wine 4 ripe olives, chopped 1/8 teaspoon of hot sauce 1/4 cup (2 ounces) of crumbled feta cheese
Cook onion, green pepper, and garlic in a nonstick skillet coated with cooking spray over medium heat, stirring constantly until tender. Add tomato and next 3 ingredients; cook for 5 minutes or until thickened. Sprinkle with feta cheese, and serve over chicken or fish. Yield: 1 cup
