Mock Hollandaise Sauce

2 egg yolks
Thick white Sauce
3 tablespoons of lemon juice
A dash of red pepper



Beat egg yolks; gradually stir one fourth of hot Thick White sauce into egg yolks. Stir into remaining hot Thick white Sauce. Cook over medium heat 2 minutes, stirring constantly. Remove from heat; gradually add lemon juice, stirring well. Stir in pepper. Yield: 1 1/4 cups

Thick White Sauce

3 tablespoons of butter or margarine
1/4 cup of all purpose flour
1 cup of milk
1/4 teaspoon of salt

Melt butter in a heavy saucepan over low heat; add flour, stirring until smooth. Cook 1 minute, stirring constantly. Gradually add milk; cook over medium heat, stirring constantly, until sauce is thickened and bubbly. Stir in salt, Yield: about 1 cup
