Serundang

one 4 ounce can of shredded coconut
4 tablespoons of butter
4 tablespoons of brown sugar
one 8 ounce can of salted peanuts or less
1 teaspoon of powdered coriander
1/2 teaspoon of powdered cumin

Brown coconut lightly in butter. Add sugar. Stir and mix well. Add seasonings and peanuts. Stir to make all hot. Let cool. Serve as one of the many condiments which add flavor to a curry of chicken or lamb. This recipe makes 8 or more heaping tablespoons, enough for 8 servings.
Double for large party. Use ground peanuts if you prefer.
