1/2 cup of sugar 1/2 cup of vinegar 4 to 5 tablespoons of light soy sauce 1 tablespoon of dark soy sauce, optional 2 tablespoons of sherry 1 1/2 tablespoons of cornstarch dissolved in 1/2 cup of water
Place the sugar, vinegar, light soy sauce, dark soy sauce and sherry in a heavy saucepan. Bring to a boil and stir in the cornstarch mixture to thicken. Use as directed in recipes.
