Vegetarian Sauce
1/3 cup of dried mushrooms, rinsed 6 sun dried tomatoes, cut in hlaves one 28 ounce can of crushed tomatoes 1/2 medium onion, finely chopped 2 cloves garlic, crushed one 15 ounce can of white kidney beans (cannellini), drained 1/2 cup of red wine 2 tablespoons of chopped green bell pepper 1/2 cup of green peas, fresh or frozen and thawed 1 tablespoon of chopped fresh parsley Salt and pepper Cooked pasta or rice Crumbled goat or blue cheese
Break dried mushrooms in pieces, discard tough stems. In a slow cooker, combine mushrooms with sun dried tomatoes, crushed tomatoes, onion, garlic, beans, wine and bell pepper. Cover and cook on HIGH 2 1/2 to 3 1/2 hours. Add peas and parsley. Cover and cook 15 minutes. Season with salt and pepper to taste. Serve over pasta or rice; sprinkle with crumbled goat or blue cheese. Makes 6 to8 servings
