Low Fat/Low Calorie Eight-Layer Appetizer Spread

lettuce leaves
3/4 cups of vegetarian refried beans
4 ounces of diced green chili peppers, drained
several dashes bottled hot pepper sauce
8 ounces of light dairy sour cream
1/3 cup of salsa
3/4 cups of chopped avocado
1/2 cup of finely shredded reduced fat Monterey jack or cheddar cheese, 2 ounces
1/3 cup of sliced green onion
1 cup of chopped lettuce
1 small tomato, seeded and chopped, bout 1/2 cup
10 ounces of light tortilla chips, about 8 cups

Partly line a serving plate with lettuce leaves. Stir together refried beans, chili peppers, and hot pepper sauce in a small bowl. Spread bean mixture over the lettuce leaves, making a layer about 1/4 inch thick. Spread sour cream in a layer atop the beans. Spoon a layer of salsa atop the sour cream; swirl salsa into sour cream. Sprinkle with avocado, cheese, green onions, lettuce, and tomato. Serve with tortilla chips. Makes 16 servings.
