Holiday Italian Cream Cheese Spread

1/4 cup of water
1/4 cup of chopped sun dried tomatoes, not packed on oil
1 cup of cream cheese, softened to room temperature
1/4 cup of chopped black olives
1/4 cup of chopped scallions
1 tablespoon of finely chopped fresh basil or 1 teaspoon dried



Place the water in a small saucepan, and bring to a boil over high heat. Stir in the tomatoes, cover, and remove from the heat. Set aside for at least 15 minutes, or until the water is absorbed.

Combine the cream cheese, olives, scallions, and basil in a medium sized bowl, and stir to mix well. Stir in the tomatoes. Transfer the spread to as serving dish, cover, and chill for at least 1 hour.

Stir before serving with Pita Chips, Garlic and Herb Baglel Chips or wedges of Italian or sourdough bread.
