| | Holiday Light Cheese Spread
1 cup of ricotta cheese 1 cup of cottage cheese 2 tablespoons of honey or maple syrup 1/2 teaspoon of vanilla extract
Combine the ingredients in a medium sized bowl. (For a smoother texture, blend in a food processor or blender.) Transfer the spread to a serving dish, cover, and chill for at least 2 hours.
Serve with slices of fruit nut bread or bagels. Yield: 2 cups
For a different flavor and texture, stir in cinnamon and raisins, drained crushed pineapple or chopped pecans or grated orange rind. |
