| Low Fat Bell Pepper Spread
3/4 cup of finely chopped red bell pepper, (about 1 medium) 3/4 cup of finely chopped yellow bell pepper (about 1 medium) 1/2 cup of part-skim ricotta cheese 1/4 cup of chopped fresh parsley 2 tablespoons of chopped fresh or 2 teaspoons dried basil 4 drops of red pepper sauce 1/2 package Neufchatel, (8-ounce size) cheese
Mix all ingredients in medium bowl. Serve with Spicy Tortilla Chips or cracker if desired. Makes about 2 cups of spread.
