| | Pimiento Cheese Spread
2 cups (8 ounces) of sharp Cheddar cheese 1 cup of small curd cottage cheese one 4 ounce jar of diced pimiento, drained 1/4 cup of mayonnaise 3 drops of hot sauce 1/2 teaspoon of salt 1/8 teaspoon of pepper
Position shredding disk in food processor bowl, and top with cover. Cut cheese to fit food chute, if necessary. Place cheese in food chute; shred, applying firm pressure with food pusher. Remove shredded cheese from processor bow; set aside.
Position knife blade in food processor bowl; add cottage cheese, shredded cheese and remaining ingredients. Process until smooth. Cover; chill thoroughly.
Serve with assorted crackers, or use to stuff celery stalks.
Yield: 2 1/2 cups
For a chunkier texture, combine shredded cheese and other ingredients in a large mixing bowl; mix with an electric mixer until blended. |
