Smoky Salmon Spread

one 7 3/4 ounce can of salmon
one 8 ounce package of cream cheese, softened
3 tablespoons of chopped green onions
6 drops of liquid smoke
Paprika

Drain salmon, reserving 2 teaspoons of liquid in a medium mixing bowl.

Flake salmon, and add to reserved liquid. Add cream cheese, green onions, and liquid smoke; beat on medium speed of electric mixer until well blended.

Transfer mixture to a serving bowl. Cover with plastic wrap, and refrigerate at least 2 hours.

Sprinkle paprika over top of spread to garnish. Serve with assorted crackers. Yield: about 1 3/4 cups

Note: For an attractive presentation, spoon dip into seeded green peppers cut in half crosswise. Remove a thin slice from the bottom of each half to stabilize pepper cup, if necessary. Use a mixture of green, red, yellow, and black bell peppers for the most dramatic effect.
