| Vanilla Vinaigrette
1/4 cup of sugar 2 tablespoons of white wine vinegar 2 teaspoons of grated onion 1/2 teaspoon of dry mustard 1/4 teaspoon of salt 1/4 vanilla bean or 2 teaspoons of vanilla extract 1/2 cup of vegetable broth
Combine the first 6 ingredients in container of an electric blender, process mixture until smooth, stopping once to scrape down sides. with blender on high, add oil in a slow, steady stream. Serve with fresh fruit or salad greens. Yield 2/3 cup
Note: 1/2 cup of Vanilla oil may be substituted for vegetable oil, omitting the vanilla bean or extract.
