Buttermilk Doughnuts

2 eggs, well beaten
1 cup of sugar
2 teaspoons of shortening
3/4 cup of buttermilk
1 teaspoon of vanilla
3 1/2 cups of flour
2 teaspoons of baking powder
1 teaspoon of baking soda
1/2 teaspoon of salt
1/4 teaspoon of nutmeg

In a large bowl thoroughly blend beaten eggs -- sugar, shortening, buttermilk, and vanilla. Sift together the remaining dry ingredients. Stir into buttermilk mixture, mixing well. Dough will be sticky. On a floured surface, knead dough 6 times. Roll out to 1/3 inch thick. Let Dough rest 20 minutes. Cut with a floured 3 inch doughnut cutter.

Fill heavy skillet to a third of its depth with melted shortening. Heat to 375ºF.  Fry doughnuts a few at a time- about 3 minutes-turning once. Drain on paper towels.
Sprinkle with powdered sugar, frost or glaze. Serve warm.
