| Pumpkin Doughnuts
2 Eggs, beaten 1 cup of sugar 2 tablespoons of oil 1/2 cup of buttermilk 1 cup of pumpkin, canned 4 cups of flour 2 teaspoons of salt 4 teaspoons of baking powder 1/2 teaspoon of baking soda 1 teaspoon of nutmeg 1/2 teaspoon of cinnamon 1/4 teaspoon of ground ginger Sugar for coating |

Beat eggs and sugar until light and fluffy. Add oil, pumpkin and buttermilk. Mix dry ingredients together and add to egg mixture. Chill 1 hour. Turn out on floured board and roll to 1/2 inch thickness. Cut with a doughnut cutter. Deep fry (375ºF.) until brown on one side. Turn over. Brown other side. Drain well on paper towels and roll in sugar. Yields: 24 Servings
