Caramel Eggnog

1/2 cup of sugar
1 cup of warm milk (120ยบ)
6 eggs, separated
1/2 teaspoon of vanilla extract
1/4 teaspoon of ground nutmeg
2 cups of milk
2 tablespoons of sugar
2 cups of whipping cream
ground nutmeg, optional

Sprinkle 1/2 cup of sugar in a heavy saucepan, place over medium heat. Cook, stirring constantly until sugar melts and syrup is light golden brown. Slowly add 1 cup of warm milk, stirring until caramel dissolves. (Caramel will harden and then melt.) Remove mixture from heat, cover and chill.
Beat egg yolks until thick and lemon colored, add vanilla and nutmeg. Slowly stir caramel mixture and 2 cups of milk into yolk mixture, cover and chill 2 hours.
Beat egg whites (at room temperature) at high speed of an electric mixer until soft peaks form. Gradually add 2 tablespoons of sugar, beating until firm peaks form.
Beat whipping cream until soft peaks form. Fold egg whites u and whipped cream into chilled mixture. Sprinkle with nutmeg, if desired. 2 1/4 quarts
