| Christmas Holiday Catfish Bake
3 large catfish fillets 1 1/2 cup of eggnog 2 tablespoons of table wine 3 eggs, beaten Salt Pepper Lemon juice 2 cups of bread crumbs Paprika |

Stir together eggnog, wine, eggs, and salt and pepper to taste. Season the fish with pepper and lemon juice. Coat with bread crumbs. Dip into eggnog batter and place in baking dish. Sprinkle with paprika. Cook at 300ºF. oven for 15 minutes. Coating will be browned and crispy and fish will flake when done. Serves 2.
(Variation: Substitute any broiling fish for the catfish.)
