Holiday Eggnog Pie

Holiday Eggnog Pie

1 (9 inch) chocolate wafer pie crust
1 tablespoon of unflavored gelatin
1/4 cup of cold water
1/3 cup of sugar
2 tablespoon of cornstarch
1/8 teaspoon of salt
2 cups of eggnog
2 squares of  unsweetened chocolate, melted
1 teaspoon of  vanilla
2 tablespoons of light rum
1 cup of heavy cream, whipped

Prepare pie crust. Sprinkle gelatin on water to soften.

In saucepan mix together sugar, cornstarch and salt. Slowly stir in eggnog. Cook in top of double boiler, stirring constantly until thickened. Remove from heat and stir in soften gelatin until dissolved.

Divide filling in half. Add melted chocolate and vanilla to one half. Add rum and fold in whip cream to other half. Pour chocolate mixture into pie shell then whip cream mixture. Chill overnight.

Eggnog Pie

4 3/4 ounce package of vanilla pudding and pie filling mix
2 cups of eggnog
1 1/4 cup of milk
1 tablespoon of  light rum
1/8 teaspoon of  ground nutmeg
9 inch graham cracker pie shell
Whipped cream
Nutmeg

Cook pudding mix for pie filling, using 2 cups eggnog and 1 1/4 cups milk. Stir in rum and nutmeg; pour into crust. Cover surface with plastic wrap; chill several hours. Garnish with whipped cream and nutmeg.
