Baked Cod with Tomatoes & Olives

1 pound of cod fillets ( about 4 fillets0, cut into 2 inch pieces
One 14 ½ ounce can of diced Italian style tomatoes, drained
2 tablespoons of chopped pitted ripe olives
1 teaspoon of bottled minced garlic
½ teaspoon of celery seed
Juice of one half lemon
2 tablespoons of chopped fresh parsley

Preheat oven to 400ºF.
Spray a 13x9 inch baking dish with nonstick olive oil flavored cooking spray. Arrange cod fillets in pan; season to taste with salt and pepper.
Combine tomatoes, olives, celery seed, lemon juice and garlic in medium bowl. Spoon over fish.
Bake 20 minutes or until fish flakes when tested with a fork. Sprinkle with parsley. Makes 4 servings
