| | Baked Flounder Superb
1/2 cup of fine Melba toast crumbs 1/4 cup of butter or margarine, melted 2/3 cup of minced green onion 2 tablespoons of snipped parsley 1/2 teaspoon of poultry seasoning 1/2 pound of fresh or thawed frozen sea scallops, chopped one 4 ounce can of mushrooms stems and pieces, drained 2 pounds of fresh or frozen flounder fillets, cut in 12 pieces 2 tablespoons of butter or margarine 2 tablespoons of flour 1/4 teaspoon of salt a few grains of pepper 1 cup of milk Grated Parmesan cheese
Toss crumbs and melted butter together in a bowl. Add green onion, parsley, poultry seasoning, scallops, and mushrooms; mix well. Place a piece off flounder in the bottom of each of 6 ramekins. Spoon stuffing mixture over flounder and top with remaining flounder pieces. Melt remaining butter in a saucepan. Stir in flour, salt, and pepper. Gradually add ilk, stirring until thickened and smooth. Spoon sauce over flounder. Sprinkle with Parmesan cheese. Bake, uncovered at 350ºF. for 20 to 25 minutes. If desired, set ramekins under broiler with tops about 3 inches from heat until lightly browned. 6 servings
