Baked Fish with Tomatoes

one 3 pound of bass or other whole fish
1 teaspoon of salt
freshly ground black pepper
1/2 teaspoon of oregano
1 tablespoon of lemon juice
3 onions, sliced
6 tablespoons of olive oil
4 ripe tomatoes, peeled and sliced
2 tablespoons of chopped parsley
lemon slices

Clean the fish and make a few incisions in the sides. Combine the salt, pepper, oregano and lemon juice. Rub this mixture into the slits and over the sides of the fish. Fry the onions in 1/2 of the oil until soft and golden. Place 1/2 the onions in a buttered casserole, add 1/2 the tomatoes and parsley and cover with the fish. Add the rest of the onions, tomatoes and parsley and pour the remaining oil over the fish. Bake in a preheated 400ºF. oven for 35 - 40 minutes or until the fish is tender. Garnish with lemon slices. Serve hot. 6 servings
