Blackened Fish Filets

3 pounds of fish filets, 1/2 to 3/4 inches thick
3/4 cup of butter
1 tablespoon of paprika
3/4 teaspoon of cayenne pepper
1 teaspoon of salt
1/2 teaspoon of black pepper
1/2 teaspoon of white pepper
1 teaspoon of onion powder
1 teaspoon of garlic powder
1/2 teaspoon of dried thyme
1/2 teaspoon of dried oregano
1 dash of cumin

Mix dry ingredients on large plate. Melt butter in heavy skillet; pour onto a a separate plate.
Dip each filet in melted butter, and then dip in the dry ingredients, patting the filets by hand.
Turn heat under skillet to high, place filets in skillet in a single layer. Cook fish, uncovered,
on each side for 2 to 3 minutes, turning them over carefully. Expect some smoke!! Serves 6.
