| Broccoli Fish Rollups
1 can (10 ¾ ounces) cream of broccoli soup ½ cup of fat free skim milk 2 cups of seasoned stuffing crumbs ¾ pound flounder ( 4 medium pieces) One 10 ounce box of broccoli spears, thawed
Preheat oven to 375ºF. Grease a 9x9 inch baking pan. Combine soup and milk in medium bowl. Set aside ½ cup soup mixture. Place fish on clean work surface. Arrange 1 broccoli spear across narrow end of fish. Starting at narrow end, gently roll up fish. Place over stuffing mixture, seam side down, Repeat with remaining fish and broccoli. Arrange any remaining broccoli spears over stuffing mixture. Spoon reserved ½ cup soup mixture over broccoli fish rollups. Sprinkle with paprika Bale for 20 minutes or until fish flakes easily when tested with fork. Makes 4 servings
