| Buffalo Fish Stuffed w/Pecans & Sherry
Stuffing 2 tablespoons of butter 4ounces of fresh mushrooms, chopped 1/4 cup of finely chopped onion 1/4 teaspoon of salt 1/4 teaspoon of pepper 1/4 teaspoon of dried thyme 1/4 teaspoon of celery seed 1/8 teaspoon of ground nutmeg 1/8 teaspoon of ground mace 3/4 cup of chopped pecans 2 1/2 cups of toasted bread crumbs 3 tablespoons of dry sherry Fish one 3 pound whole buffalofish, scaled and boned oil, for lubricating fish and greasing fish basket 4 lemon slices
Make stuffing: Melt butter in large frying pan. Add mushrooms and onion and sauté over low heat, stirring often, for about 10 - 15 minutes or until the liquid has evaporated. Add salt, pepper, thyme, celery seed, nutmeg and mace. Continue cooking another moment. Remove from heat. Stir in pecans, bread crumbs and sherry. Mix well. Lightly pack stuffing into cavity of fish. Oil outside of fish on both sides. Then oil inside of fish basket. Lay 2 slices of fish on both sides. Then oil inside of fish basket. Lay 2 slices of lemon on bottom of fish grill basket. Lay fish over lemon slices. Top with 2 additional slices. Attach top of basket. grill buffalofish: Grill stuffed fish about 10 minutes on each side or until fish flakes easily with a fork and outside is beginning to be crispy and brown, Transfer to a serving platter. Serve immediately with Homemade Chunky applesauce. 4 servings |
