| Catfish Cakes
1 1/2 pounds of farm raised catfish fillets 1 large egg, lightly beaten 2 tablespoons of mayonnaise or salad dressing 1 tablespoon of prepared mustard 1 tablespoon of butter or margarine 1 teaspoon of chopped fresh parsley 3/4 teaspoon of salt 1/2 teaspoon of dry mustard 1/2 teaspoon of ground black pepper 1/4 teaspoon of garlic salt 1/8 teaspoon of ground red pepper 3/4 cup of crushed cornflakes cereal Vegetable oil Garnishes: lemon wedges, fresh flat leaf parsley sprig Tartar sauce or cocktail sauce
Arrange catfish in a lightly greased 13x9x2 inch baking dish; cover with aluminum foil, and bake at 400ºF. for 20 minutes or until fish flakes easily when tested with a fork. drain and flake. Combine egg and next 9 ingredients in a large bowl. Stir in fish. Shape into 8 (2 1/2 inch) patties; coat with crushed cereal. Place patties on paper towels, refrigerate 1 hour. Pour oil to depth of 1/2 inch into a large skillet. Fry patties in hot oil over medium heat about 2 minutes on each side or until golden. Drain on paper towels. garnish, if desired. Serve with sauce. Yield: 4 servings
