| Catfish & Potatoes
one 1 pound freshwater catfish 2 medium potatoes, sliced 1 small onion, sliced Salt and pepper to taste Butter Catsup, optional
Preheat oven to 350ºF. Place the catfish on a sheet of heavy duty foil and place the potatoes around the catfish. Arrange onion on catfish and potatoes and sprinkle with salt and pepper. Dot with butter. Fold the foil over, seal and place in a baking pan. Bake for 50 minutes. Open the foil and drizzle the catfish mixture with catsup. Bake for 10 minutes longer
