| Catfish Stuffed w/Walnuts
2 tablespoons of butter 1/2 cup of finely chopped onion 1/2 teaspoon of finely chopped fresh hot pepper 1/4 teaspoon of salt 3 pinches of dried rosemary 2 pinches of dried thyme 1 cup of chopped walnuts 1 cup of bread crumbs
Fish one 3 pound farm raised catfish, scaled, boned, head cut off' oil for lubricating fish and greasing fish basket 4 lemon slices
Make stuffing: Melt butter in a medium frying pan, add onion and pepper, and sauté 10 minutes or until onion is translucent. Add salt, rosemary, and thyme and mix well over low heat for a moment. Remove from heat and combine with walnuts and bread crumbs, mixing well. Fill catfish cavity with stuffing. Oil catfish on both sides. Oil fish basket. Lay 2 slices of lemon in middle of fish basket. Then arrange catfish so it is lying on lemon slices. Top with 2 more lemon slices, then fasten top of grill basket over fish. Grill over ashen coals. Grill 6 -7 minutes on each side or until fish flakes easily when tested with a fork. Serve immediately. 4 servings
