Cod w/Spanish Almond Garlic Sauce

Almond Garlic Sauce

2 tablespoons of oil
1/2 cup of finely chopped onion
1 - 2 fresh hot peppers, seeds removed, chopped fine
5 cloves garlic, chopped fine
4 tomatoes, peeled, seeded and chopped fine
22 whole blanched almonds
1/2 teaspoon of salt
1/2 cup of finely chopped fresh parsley

Fish
Oil for lubricating fish  and for greasing grill
2 pounds of fresh cod fillets

Make sauce: Heat 2 tablespoons of oil in large saucepan. Sauté onion and peppers in oil over medium heat for 10 minutes. Add garlic and cook for an additional 1 - 2 minutes, taking care that it doesn't burn. Add tomatoes, heat to simmer, and let cook for 3 - 4 minutes.
Meanwhile, spread almonds on small cookie sheet or baking dish in a single layer. Place in a 350ºF. oven for 10 minutes or until lightly browned. Grind in blender until coarsely grated. Add grated almonds to sauce along with the salt. Stir well. Then remove from heat and stir in parsley.
Grill cod: Lightly oil cod fillets on both sides. Place on greased grill over ashen coals. Cook 4 - 5 minutes on both sides or until fish turns white. Transfer cod to heated serving platter. Spoon sauce over cod. Serve immediately. 4 servings
