Flounder in Wine

1 pound of flounder fillets
salt and pepper to taste
1 slice of tomato for each fillet, or canned tomatoes
1/4 cup of white wine
1/2 to 1 teaspoon of basil
1/2 to 1 cup of grated sharp cheese

Place flounder fillets in a greased baking dish and sprinkle with salt and pepper. Place slice of tomato on each fillet and alt. Pour white wine over the fish and tomatoes and sprinkle with basil. Bake at 350ºF. for 20 minutes, add grated sharp cheese and return to oven for 5 - 10 minutes or until fish flakes with a fork. This is a low calorie, no fat way to eat fish.
