| Soft Shelled Crab w/Garlic Butter
8 soft shelled crabs 1/4 cup of Clarified butter 2 cloves garlic, minced salt, pepper, and paprika to taste
To clean soft shelled crabs, put the crabs, one at a time, on cutting surface. Cut off face portion of crab. Lifting the shell easily on either side of back, scrape off the gills. Lift shell and remove sand receptacle from under the mouth area. Discard all removed portions from the crab. wash crab and pat dry with paper toweling. Or, make friends with your fishmonger, he may clean them for you.
Lay each crab on a square of aluminum foil. Begin to fold foil, envelope style, but do not seal. Heat butter in small saucepan over medium heat. Sauté garlic in it until tender, stirring often. Drizzle garlic butter over cakes. Sprinkle crabs with salt, pepper and paprika to taste. Fold and seal envelopes securely. Arrange the crab packages over hot grill in a single layer. Cook for 4 - 5 minutes. Open one envelope and check to see if crab has steamed ( crabs will turn a reddish color when done). If not rewrap and continue grilling until the crabs have cooked. Serve soft shelled crabs on individual plates, allowing guests to open packages themselves. Makes 4 serving
