Grilled Swordfish with Cilantro Butter

4 fresh swordfish filets
2 tablespoons of olive oil

Cilantro Butter:
1 bunch cilantro
1/2 cup of butter
1/4 teaspoon of lemon extract
salt and pepper, to taste

Lightly coat filets with olive oil. When grill is ready, place fish on oiled grill and cook until just
firm to the touch (about 4 minutes per side for thick filets, less for thinner fillets; don't overcook).
Remove to platter and pour cilantro butter over. To make cilantro butter: Wash cilantro thoroughly and remove thick stems. Combine with butter in blender and mix several seconds until light and fluffy. Blend in lemon juice. Season with salt and pepper. Serves 4.
