Savory Halibut Casserole

1/4 cup of butter or margarine
8 slices of onion, cut 1/4 thick
1 medium green pepper, sliced into 8 thin rings
1/2 cup of chopped celery
1 teaspoon of salt
1 teaspoon of dried basil leaves
1/4 teaspoon of pepper
one 1  pound can of stewed tomatoes
two 16 ounce packages of frozen halibut or cod
8 slices of plum tomatoes

Preheat oven to 375ºF. Grease a 12x8x2 inch baking dish.
In  hot butter  in medium skillet, sauté onion, green pepper and celery until tender, about 5 minutes.
Add salt, basil, pepper and stewed tomatoes. Bring to boiling, stirring; simmer, uncovered 15 minutes. Spoon 1 cup of sauce into  bottom of prepared baking dish.
Cut fish in each package into four pieces. Place in baking dish. Spoon remaining sauce over fish.
On each piece of fish, arrange in this order, a green pepper ring, onion slice and plum tomato sauce.
Bake, covered with foil, 30 minutes, basting once with pan liquid. Remove foil, bake for 10 more minutes or until fish flakes easily. Makes 8 servings
