| Wine Herb Halibut Steak
3 tablespoons of butter or margarine four 1 inch thick halibut steaks 1/2 cup of Chablis or other dry white wine 1 tablespoon of lemon juice 1/4 teaspoon of dried basil 1/4 teaspoon of dried oregano 1/4 teaspoon of salt 1/4 teaspoon of pepper 1/4 teaspoon of paprika
Melt butter in a large skillet over medium heat. Arrange halibut steaks in a single layer and cook 3 to 4 minutes on each side. Add wine and lemon juice; sprinkle basil and remaining ingredients over steaks. Cover, reduce heat and simmer 8 to 10 minutes. Serve with pan drippings. Yield 4 servings |
