| Halibut with Cilantro Pesto
four 4 ounce halibut fillets 3 cloves garlic 2 cups of chopped fresh cilantro, divided 3 tablespoons of pine nuts 1/2 cup of shredded Parmesan cheese 1/2 teaspoon of salt divided 1/4 teaspoon of pepper 1/4 cup of olive oil 1/3 cup of lemon juice 1 clove garlic, minced

Preheat the grill to medium. Meanwhile, to prepare cilantro pesto place 1 1/2 cups to the cilantro, 3 cloves garlic, pine nuts, Parmesan cheese, 1/4 teaspoon of the salt, and pepper in container of food processor; cover and blend. Add olive oil in slow, steady stream at low speed until combines. Set aside. Combine the lemon juice, remaining 1/2 cup cilantro , minced garlic, and remaining 1/4 teaspoon salt in a small bowl; pour over fish. Grill fish 6 to 8 minutes on each side or until fish flakes with a fork. Serve cilantro pesto. Serves 4 Seafood Cookbooks |
