| Mackerel with Garlic & Tomatoes
4 large fresh tomatoes, peeled and chopped 1/2 teaspoon of crumbled dried oregano Salt and pepper to taste 1 head of garlic with large cloves 2 mackerel, about 1 1/2 pounds each, cleaned and split in half Crumbled dried rosemary Oil for greasing grill
Toss tomatoes with oregano, salt and pepper. Set aside. Loosen unpeeled cloves of garlic and place on grill at edge of hot coals about 10 - 15 minutes before starting to grill fish. Sprinkle mackerel with rosemary. Arrange fish on prepared grill or in an oiled double hinged grill basket. Secure basket. Sprinkle 2 tablespoons of rosemary over hot coals. Grill mackerel for 3 minutes, turn fish over, and continue cooking about 3 minutes or until fish begins to flake when tested. Turn garlic occasionally as you are grilling the mackerel. Roast garlic for 20 minutes altogether, or until the insides of the cloves are soft. Place mackerel on heated platter. Arrange tomato mixture around grilled fish. Separate garlic cloves and sprinkle over fish. Garlic, when grilled, has a mild, somewhat nutty taste. Serve fish and allow guests to squeeze out the garlic from individual cloves and spread over mackerel. 4 servings |
