| Old Fashioned Fillet of Sole in White wine
2 pounds of sole fillets 1/2 cup of dry white wine 1/2 cup of chopped onion 3 tablespoons of butter, melted 2 bay leaves, crushed 1 teaspoon of chopped parsley 1/2 teaspoon of salt 1/4 teaspoon of pepper
Put fillets into a greased shallow 2 quart casserole. Mix wine, onion, butter and dry seasonings. Pour over fish. Cover casserole. Bake at 375ºF. for 25 minutes or until fish flakes easily when tested with a fork. 6 servings
