Cheese Topped Orange Roughy (4 Pts)
2 pounds of orange roughy or sole/code or snapper TOPPING: 1/3 cup of light mayonnaise 1/3 cup of Parmesan cheese grated 1/4 cup of green onion sliced 1/2 teaspoon of lemon juice 1/4 teaspoon of garlic powder 1/4 to 12 Hot sauce to taste |

Instructions Preheat oven to 350ºF. Place fish in a shallow glass casserole coated with cooking spray; bake 8 minutes or until fish flakes easily when tested with fork. Meanwhile, mix topping ingredients. Spread topping evenly over cooked fish fillets. Broil 6 inches from heat for 5 minutes or until topping is lightly browned.
