| | Orange Roughy Fillets on a bed of Sautéed Green onions
3 tablespoons of butter 2 cloves garlic, minced 1 bunch of green onions, trimmed and cut into 2 inch pieces 1/2 teaspoon of crumbled dried chervil four 7 ounce orange roughy fillets Melted butter Oil for greasing fish basket 1 tablespoon of capers, drained, for garnish
While coals are heating, prepare green onions. Melt butter in skillet. sauté garlic in it until soft. Add green onions and chervil and sauté until tender, stirring occasionally. Arrange onions in a nest design on a serving platter.
Brush roughy fillets with butter. Arrange in a prepared fish basket and grill for 2- 4 minutes. Turn fish and continue grilling for about 3 minutes, depending on the thickness of the fish, until fish begins when tested with a fork. Place fish over green onions and sprinkle with capers. Serve with Creamy Cole Slaw. Yields: 4 servings. |
